Jicama is very healthy root vegetable that is part of the legume family. It grows natively in Central America, and is a staple in warm climates as far away as South Asia. Jicama is low in calories, low on the glycemic index, but full of vitamins and nutrients. It is very high in fibre, vitamin C, potassium, and antioxidants. Jicama has a similar texture to turnip, and a taste closer to that of an apple. Buy when it is firm to the touch, and store in a cool dark place for up to four weeks. Jicama can be prepared in many ways, but always be sure to remove the thick peel.
