THREE INGREDIENT PB-BANANA COOKIES

Recipe 27 - đŸȘ đŸ˜Č This recipe for cookies – yes, cookies!!! – isn’t so much a recipe as it is a “formula.” And it’s surprisingly delicious!

🍌 It all starts with a base of overripe bananas – use your choice of grain (oats, buckwheat flakes, quinoa flakes, etc) and nut butter. đŸ„œ

This is a classic one ... with oats, bananas, and peanut butter.

✅ NOTE: I probably shouldn’t tell you this, but adding a tablespoon or two of mini-chocolate chips takes these over the top.

What You'll Need‍

Makes 4 cookies

  • 1 cup (80 grams) rolled oats (gluten-free, if possible)
  • 1Âœ large overripe bananas
  • ÂŒ cup (65 grams) peanut butter
  • (optional: Âœ tsp baking powder)

What To Do

Preheat your oven to 350ÂșF (175ÂșC). Line a baking sheet with parchment paper.

In a large mixing bowl, smash the bananas – use a fork or potato masher. Add the rolled oats and peanut butter (and baking powder if using) and stir well to incorporate.

Divide the batter into 4 equal-sized portions and form balls. Place on the baking sheet and press down using the back of a fork, into a circle.

Bake for about 10 minutes, until they start to become golden. Remove from the oven and let cool on the sheet for another 10 minutes. Finish cooling on a wire rack.
